Zoodles (Zucchini Noodles) and Meatballs

Ingredients
- 2, large zucchinis
- 1lb of ground sirloin
- 1 small, red onion (chopped)
- 3 cloves of garlic (minced)
- 3 tablespoons of ketchup (Tessemae's Ketchup if you are on Whole30)
- 2 teaspoons of mustard
- 3 sprigs of time
- 2 tablespoons of black pepper
- 2 tablespoons of salt
- 1/2 cup of Italian breadcrumbs
- 1 jar of Classico Tomato and Basil Marinara Sauce (Homemade marinara sauce if you are on Whole30)
Instructions
- Scrub and rinse the zucchinis thoroughly. Then, using your spiralizer, sprialize the zucchinis into zoodles. Set the zoodles aside in a medium-sized mixing bowl. (Pro tip: If you do not have a spiralizer, use a vegetable peeler to make fettucine-style zoodles instead. Simply run the vegetable peeler along the zucchini lengthways and voila, fettucine zoodles.)
- Place the ground sirloin into a large mixing bowl. Mix in the chopped onion, minced garlic, ketchup, mustard, black pepper, and 1 tablespoon of salt. Be sure to mix it thoroughly so that all off the ingredients are evenly distributed.
- Remove the leaves of thyme from the thyme sprigs and add them into the sirloin mixture. Then add the egg and breadcrumbs. If you are on Whole30, do not add the breadcrumbs. You may use a fork to mix in the eggs and breadcrumbs, but I recommend that you use your hands so that you can really get everything mixed in properly.
- Now it is time to actually roll the meatballs. You should be able to make about 14-16 medium sized meatballs from the ground sirloin. Take small pieces of the sirloin mixture and roll them into a ball using the palms of your hands. You may make the meatballs as small or as large as you would like, but just remember, the larger the meatball, the longer it will take to cook.
- In a 2-qt saucepan, bring 1 cup of water to a boil. Once the water is boiling, add the meatballs and cover the saucepan. Reduce the heat to a medium level. Allow the meatballs to cook for about 10 minutes. Then, stir the meatballs and add in 2 cups of marinara sauce. Allow the meatballs to cook for an additional ten minutes. Keep the cover on the saucepan while the meatballs cook; if you don't, you will have little splatters of marinara sauce all over your stovetop.
- In another 2-qt sauces, bring 3 cups of water and 1 tablespoon of salt to a boil. Once the water is boiling, add in the zoodles and allow them to cook for 2-3 minutes. If you cook the zoodles for much longer than this, they will become very mushy and retain a lot of water. Empty the zoodles into a strainer and then begin to plate the zoodles.
- Spoon 3-4 meatballs and as much (or as little) marinara sauce over your plate of zoodles as you would like. Enjoy!
