Whipped Garlic-Herb Potatoes

Ingredients
- 2 quarts of water
- 2 tablespoons of iodized salt
- 2 1/2lbs of Yukon Gold potatoes
- 1/2 cup of whole milk
- 3 tablespoons of Kerrygold butter (unsalted)
- 2 cloves of garlic
- 2 tablespoons of fresh parsley (chopped)
- 3 sprigs of fresh thyme
Instructions
- Place the water and 1 tablespoon of salt into a large pot and bring it to a boil. While the water is coming to a boil, peel the potatoes and cut them into quarters.
- Once the water is boiling, add in the potatoes, cover the pot, and allow the potatoes to cook for 15-20 minutes or until tender. While the potatoes are cooking, mince the garlic, rough chop the parsley, and remove the thyme leaves from the stem.
- Drain the potatoes and place them into your Kitchenaid bowl or a large mixing bowl. Using your Kitchenaid or a hand mixer, whip the potatoes on a low speed for 2-3 minutes while slowly adding in the milk.
- Add in the remaining salt, butter, garlic, parsley, and thyme. Whip for 2-3 more minutes, plate, serve, and enjoy.
