Veggie Frittata

Brunch is my probably my favorite weekend activity. Ah, who am I kidding? It is definitely my favorite weekend activity. Frittatas are such an easy and beautiful brunch menu item. They are low stress, low mess and absolutely delicious. Although the recipe provided below primarily uses zucchini and squash, you really can swap those veggies for whatever you have on hand. I frequently switch things up simply based on what vegetables and herbs I have in the refrigerator.
