The Hubs is definitely a meat and potatoes kind of guy. It is at the point where if I make a meal and there is not some kind of meat, he has decided that it is not not dinner; it is a snack. Needless to say, this recipe is one of his favorites. Turkey meatloaf with mashed potatoes and steamed broccoli equals one happy husband in my household and I’m pretty sure that this recipe will bring a smile to your face, too. Let’s get cooking.
Turkey Meatloaf with Mushroom Gravy

Ingredients
- 1 small, red bell pepper
- 1 stalk of celery
- 2 cloves of garlic
- 1 small white onion
- 2/3 cup of white mushrooms
- 1lb of ground turkey
- 1 teaspoon of Kosher salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of thyme
- 1 egg
- 1/2 cup of bread crumbs
- 2 tablespoons of butter
- 1 pkg. of McCormick mushroom gravy mix
- 1 cup of water
- Crispy fried onions
Instructions
- Preheat the oven to 350 degrees. Dice the pepper, celery, garlic, onion, and mushrooms and set them aside.
- Empty the ground turkey into a large mixing bowl and add in the black pepper, salt, and thyme. Using your hands, mix the seasonings into the ground turkey.
- Crack the egg into the bowl with the ground turkey and mix it well. Then mix in the breadcrumbs and all of the vegetables, except for 1/3 of the mushrooms. You will need the reserved mushrooms to make the mushroom gravy.
- Place the ground turkey into a loaf pan or in mini loaf pans and bake for 25-30 minutes (for mini loaves) or 40-45 minutes (single loaf).
- While the meatloaf is in the oven, make the mushroom gravy. In a small skillet, melt the butter and sauté the remaining mushrooms for about 1 minute. Then add in the mushroom gravy mix and 1 cup of water. Turn the stove down to a low heat and allow the gravy to cook for about five minutes, stirring periodically. After five minutes have passed, turn off the stove.
- Remove the loaf pan(s) from the oven, use a knife to separate the meat from the sides of the pan (if necessary). Plate the meatloaf, smother with gravy, and top with crispy fried onions.
- Serve with mashed potatoes, broccoli or green beans, and enjoy.
