There is not a day that goes by that I do not wish that I was somewhere (preferably Barbados) on the beach. Alas, duty calls and that is not always an option. But, that doesn’t mean that I can’t bring a taste of the tropics to me. My Tropical Fruit Salad brings big tropical flavor and in a matter of minutes, you will be able to transport your tastebuds to the Caribbean. Hopefully that will do until your body can follow.
Tropical Fruit Salad

Ingredients
- 1/2 pineapple
- 1/2 papaya
- 4 Hayden or Kent mangoes
- 4 guavas
- 1/2 cup of shredded coconut
Instructions
- Peel, core and slice the pineapple into chunks and place them into a large mixing bowl. Then, peel the papaya, remove the seeds and cut the papaya into cubes and add them into the bowl.
- Peel and cut the mango into chunks, making sure to cut around the see before adding the chunks into the bowl. Then, slice the guavas into rounds and add to the bowl.
- Sprinkle the fruit salad with coconut, stir thoroughly, serve and enjoy.
