Every year, right when Fall arrives, I begin to crave chili. The morning temperatures have just started to drop and the evening air has just a bit of bite. It’s just something about the change in weather that makes me crave hearty meals, and chili is one of my favorites. For my vegetarian and vegan friends, you can enjoy this recipe too. Just skip the ground beef and you will be good to go. Oh, and the best part is, this chili tastes even better the next day! Let’s get cooking.

Ingredients
- 1 large onion
- 2lb ground beef
- 2 packets of McCormick Chili Seasoning Mix
- 2 tablespoons of smoked paprika
- 1 tablespoon of garlic powder
- 1 teaspoon of ground black pepper
- 1 can of Hunt's Fire Roasted Tomatoes
- 1 can of Bush's Chili (Pinto) Beans
- 1 can of Bush's White Chili (Great Northern)Beans
- 1 can of Bush's Black Chili Beans
- Kosher salt (to taste)
- 2 jalapeno peppers
- Shredded cheese
- Cooking oil
Instructions
- Finely dice the onion. Heat a large skillet to a medium heat and add in one tablespoon of cooking oil. Add the onion into the skillet and saute until the onions are translucent.
- Using your hands, add the beef into the skillet, separating it as you go. Mash the ground beef with a fork so that the beef separates. Stir in one packet of McCormick chili powder and then set the beef aside.
- Transfer the beef to a large pot. Stir in the paprika, garlic powder, black pepper, and tomatoes. Cover the pot and allow the chili to simmer for about 10 minutes. While the chili is simmering, slice the jalapeno peppers into small rounds and set them aside.
- Drain the Great Northern Beans and black beans, and add them to the chili. Do not strain the chili beans; add them directly into the chili.
- Add in the second packet of chili seasoning powder, Kosher salt (to taste), and 1/2 of the jalapeno rounds. Cover the chili and allow it to simmer on a low heat for 30-35 minutes.
- Ladle some chili into a serving bowl, top with sliced jalapenos and shredded cheese and enjoy.
