Taco Pie

Who doesn’t love a good taco? If you love tacos, then taco pie is right up your alley. It has all of the deliciousness of a traditional taco, but you can eat it with a knife and fork and there is no need to be sad if the whole thing comes apart on your plate because it is meant to be that way. Let’s get to it.

Ingredients

1lb of ground beef or ground turkey
1/2 cup of sweet onions, diced
6 flour tortillas
3 roma tomatoes, diced
2 cups of romaine lettuce, chopped
2 scallion stalks, chopped
1 cup of sharp cheddar cheese, shredded
1/2 cup of Tostitos nacho cheese
salt, to taste
pepper, to taste
1 tablespoon of olive oil

Instructions

Preheat the oven to 350 degrees.
Heat the olive oil in a medium sized skillet to a medium heat.
Saute the onions in the skillet.
Add the ground beef to the skillet and mix it in with the onions.
Brown the ground beef. Add in a pinch of salt and pepper, stir, and set it aside.
In a pie pan, place one flour tortilla. Top the tortilla with a layer of beef and then a layer of shredded cheese. Place another tortilla and repeat the layering process until you have used all six tortillas. The very last layer should be ground beef, no tortilla.
Top the last layer of beef and shredded cheese with as much (or as little) Tostitos nacho cheese as you would like.
Place the pie dish into the oven for 15 minutes.
Remove the pie dish and top with lettuce, tomatoes, and scallions.
Slice, serve, and enjoy.
