One of the wonderful things about living in metro Atlanta is the easy access to u-pick farms. One of my favorite Spring activities is heading out to to the local strawberry patches to pick my own strawberries. But that also means, I usually come home with two gallons of strawberries that need to be used. So what do I do? Use some of them to make strawberry doughnuts, of course! Sounds delicious, doesn’t it? Let’s get baking.

Ingredients
- Cooking spray or Crisco (for greasing)
- 8 ounces of strawberries
- 4 Tbsp. (Half a stick) of unsalted butter
- 1/2 cup of cooking oil
- 3/4 cup of brown sugar
- 2 large eggs, room temperature
- 1 tsp. of iodized salt
- 1/2 tsp. of baking soda
- 1 Tbsp. of baking powder
- 1/2 tsp. of ground cinnamon
- 1/4 tsp. of ground nutmeg
- 1 tsp. of vanilla extract
- 2 cups of all purpose flour
- 1 cup of milk
Instructions
- Preheat the oven to 425 degrees. Lightly grease two doughnut pans.
- Wash, hull, and dice the strawberries. Then set them aside.
- Using your Kitchenaid or a hand mixer, beat the butter, cooking oil, and brown sugar until smooth. Then, add the eggs into the mixture one at a time and beat until the eggs are fully incorporated into the mixture.
- Stir in the salt, baking soda, baking powder, cinnamon, nutmeg and vanilla extract.
- Sift the flour into the butter mixture, alternating with pouring in the milk a few ounces at a time. Continue to alternate sifting the flour and milk, allowing each sift and pour to fully incorporate into the mixture before adding in more. Repeat this step until all of the flour and milk have been used.
- Turn off your mixer. Pour the diced strawberries into the batter and using a large wooden spoon or silicone baking spatula, incorporate the strawberries into the batter.
- Spoon the batter into the doughnut trays. Put just enough batter so that each doughnut is about 3/4 filled.
- Place the doughnut trays in the oven for 10–12 minutes. Remove the doughnuts front he oven, allow to cool for 6-8 minutes and enjoy.
