I’ll eat jerk chicken with almost anything—a piece of warm, crusty bread, rice and peas, macaroni, fried plantain, cabbage, or just by itself because when it’s done right, it is downright delicious. But, if you’re anything like me, you don’t just have a jerk drum chilling in the backyard. So what’s a homecook to do? You break out the cast iron grilling pan, that’s what!
Now this recipe was created for indoor grilling on a cast iron pan, but it works just as well on a grill or in a jerk drum. You’ll just need to adjust the grilling time accordingly.
