I love seafood, especially shrimp. Shrimp scampi is one of my go to meals. It works well as an appetizer or entree, for a casual weeknight meal or a romantic dinner for two. You can serve it with salad, pasta, potatoes, or even roasted bread. And the best part is, it’s really simple to make. Enough talking about it. Let’s get cooking.

Ingredients
- 6 cloves of garlic
- 1lb of jumbo shrimp (deveined and peeled, tail on)
- 1/2 lime
- 1 teaspoons of Kosher salt
- 1 teaspoon of onion powder
- 1/2 teaspoon of ground black pepper
- 3 tablespoons of unsalted butter (cold)
- 1/2 cup of dry white wine
- 1/3 cup of parsley (chopped)
Instructions
- Preheat the oven to 350 degrees. While the oven is preheating, mince the garlic cloves and set them aside.
- Place the shrimp into a large mixing bowl, squeeze the juice of 1/2 lime over the shrimp, then add in the salt, onion powder and pepper. Toss the shrimp until evenly coated with the lime juice and the seasonings.
- Transfer the shrimp into a baking pan. Then, dice the butter into small cubes and place them into the baking pan with the shrimp. Pour the wine into the baking pan and sprinkle the minced garlic over the shrimp.
- Bake the shrimp for 6-8 minutes or until pink. Remove the shrimp from the oven and spoon the wine and butter sauce over the shrimp. Sprinkle with fresh parsley, serve, and enjoy.
