It’s the weekend, but you have a ton of things to do around the house. Story of my life. That’s exactly why I love frittatas. Throw everything together, put it in the oven, and (New York accent) fuhgeddaboutit. Just be sure to come back in 30 minutes so that you don’t burn down the house. Let’s get started.
Sausage Poblano Frittata

Ingredients
- 8 eggs
- 4 mild italian sausage links (casings removed)
- 1 small red bell pepper
- 1/2 small green bell pepper
- 2 cups of fresh spinach
- 1/2 large poblano pepper
- 1 cup of shredded sharp cheddar cheese
Instructions
- Preheat the oven to 350 degrees.
- In a pie pan, mash the Italian sausage with a fork until each link is separated into small pieces.
- On a cutting board, dice the bell peppers and spinach, then add them into the pie pan with the sausage.
- Crack each egg one at a time and add it to the pie pan.
- Stir all of the ingredients in the pie pan together and place the pie pan into the oven for 20 minutes.
- Dice the poblano pepper and set it aside.
- When twenty minutes have passed, open the oven, slide out the pie pan, top the frittata with the cheese and poblano peppers, and place the pie pan back into the oven for ten minutes.
- Once ten minutes have passed, remove the frittata from the oven, slice, plate, and enjoy.
