Who doesn’t love french fries? I mean really. And for those of us who really love french fries, there is a national holiday specifically created for french fry lovers near and wide. That’s right, July 13th is National French Fry Day. I could not imagine a better day for me to post this recipe. Let’s get to it.

Ingredients
- 3 large Russett potatoes
- 3 table spoons of extra virgin olive oil
- 1/2 cup of parmesan cheese
- salt, to taste
Instructions
- Peel the potatoes, slice them as needed, and run them through a french fry cutter. - Place the french fries in a large bowl and fill the bowl with water. Allow the french fries to soak in the water for ten minutes.
- While the french fries are soaking, preheat the oven to 400 degrees.
- Remove the french fries from the water and pat them dry. Place the french fries onto a large non-stick baking sheet.
- Bake the fries for 20-22 minutes or until golden brown. Be sure to turn the fries over after the first 12 minutes so that all sides of the fries get a nice golden color.
- Once the fries have finished baking, place them into a large mixing bowl and toss them in the olive oil, salt, and Parmesan cheese.
- Garnish with chervil or parsley and enjoy!
