Hectic weekdays call for easy weeknight meals. Wouldn’t you agree? This one pot pasta is low stress and no mess. It almost sounds too good to be true, but, I happen to have photographic proof (and a pretty simple recipe). Let’s get cooking.

Ingredients
- 1lb of ground beef
- 1/2 cup of red bell pepper (diced)
- 4 cloves or garlic (minced)
- 2 cups of fresh spinach (chopped)
- 3 cups of low sodium vegetable broth
- 1 1/2 cups of marinara sauce
- 12 ounces of penne pasta
- 1/2 cup of shredded mozzarella cheese
- 1 teaspoon of olive oil
Instructions
- In a large skillet, bring the olive oil to a medium heat. While the oil is heating up, dice the garlic and bell peppers.
- Add the garlic and bell peppers to the skillet; saute the garlic and pepper for about 2 minutes, stirring occasionally.
- Add the ground beef to the skillet. Then, using a fork or wooden spoon, separate the ground beef and stir it into the garlic and peppers.
- Continue to stir the ground beef until the ground beef has turned brown. Then add in the chopped spinach and stir the ground beef a few more times.
- Pour the vegetable broth and pasta into the skillet. Stir the pasta into the beef and then cover the skillet.
- Allow the pasta to cook for about 8 minutes, then stir in the marinara sauce.
- Top the pasta with the mozzarella cheese and allow the pasta to cook for about 3 more minutes.
- Plate and enjoy.

I love anything that consists of one pot. It makes my life easier. This recipe is not only tasty, but it truly is easy. I just substitute turkey for the beef and I’m cooking!
