Ingredients
- 1, 10 oz bag of Rana mushroom ravioli
- 1/2lb of shrimp, peeled and deveined
- 12 stalks of asparagus
- 1/2 cup of portabella mushrooms
- 3/4 cup of Bertolli mushroom alfredo sauce
- 1 teaspoon of sea salt
- 1/2 lime
- 1 teaspoon of paprika
- 1 teaspoon of onion powder
- 1 tablespoon of extra virgin olive oil
- 4 quarts of water
- 6 sprigs of thyme (for garnish)
- fresh Parmesan cheese (if desired)
Instructions
- In a large saucepan, bring four quarts of water to a boil.
- While the water is coming to a boil, place the shrimp into a bowl and squeeze the juice of 1/2 a lime over the shrimp. Stir the shrimp a few times so that each piece is coated in lime juice.
- Take the asparagus stalks and chop them into thirds. Each piece should be about three inches long. Then chop the mushrooms and set them aside.
- By now, the water should be boiling. Add the asparagus and ravioli to the boiling water and allow them to cook for four minutes.
- While the ravioli and asparagus are cooking, bring the olive oil to a medium heat in a large skillet.
- Add the shrimp into the skillet. While the shrimp is searing, strain the asparagus and ravioli. Let the asparagus and ravioli sit in the strainer.
- Add the salt, paprika, and onion powder to the skillet with the shrimp and stir.
- Once the shrimp has turned pink on all sides, add the ravioli and asparagus and stir again so that all of the ingredients are evenly mixed.
- Pour in the alfredo sauce and add the mushrooms as well. Stir the sauce so that the ravioli, shrimp, and asparagus are nicely coated.
- Plate, garnish with Parmesan and a few sprigs of thyme, and enjoy.
