Well, these mini Philly cheesesteaks definitely fit the criteria and while they may be mini in size, they are certainly big in flavor. Let’s get cooking.

Ingredients
- 1 small onion
- 1 medium-sized bell pepper
- 1 teaspoon of canola oil
- 1lb of Angust roast beef (thinly sliced)
- ground black pepper (to taste)
- salt (to taste)
- American cheese slices
- 6 mini sub (hoagie) rolls
Instructions
- Wash, peel, and slice the onion and bell pepper. Then, bring the canola oil to a medium heat in a skillet and sauté the onion and bell pepper for about 4 minutes, stirring the onion and pepper constantly so that they do not stick to the pan. Remove the onion and pepper from the pan and set aside.
- Then, brown the beef in the skillet by placing each slice down and allowing it to cook for about 1-2 minutes per side. Sprinkle each side with salt and pepper, to taste, and then remove from the skillet. Repeat this step until all of the beef has been used.
- On a cutting board, chop the beef into bit sized pieces. Open each hoagie bun and place a slice of cheese on the bottom of the bun and top the cheese with as much beef as you would like.
- Top the beef with a serving of the sautéed peppers and onions. Then, place another slice of cheese on top. Repeat this step until all of the mini sub rolls have been used.
- Sit back, relax, and enjoy the game.
