Never know what to do with your leftover mango? Who are we kidding? What left over mango? In my house, mangoes are eaten as quickly as I can purchase them, but I always buy an extra one to make some mango salsa. It’s sweet, it’s salty, it can be a topping on crab cakes, or a great dip. Enough talking about it. Let’s get to it!

Ingredients
- 1 medium sized red mango
- 1 small red onion
- 1/2 lime
- 1/4 teaspoon of Kosher salt
- 1 tablespoon of fresh parsely, chopped
Instructions
- Dice the mango into small chunks and finely dice the red onion.
- In a small bowl, combine 1 cup of diced mango and 1/2 cup of red onion.
- Squeeze the juice of half a lime over the mango and onions and stir.
- Add in the salt and minced parsley, stir the salsa again, and prepare your tastebuds for complete happiness.
