Ingredients
- 2lbs of frozen tater tots
- 6 slices of thick cut bacon
- 1 cup of shredded sharp cheddar cheese
- 1 small tomato
- 1 small red onion
- 1 smal bell pepper
- sour cream
- 1 scallion stalk
Instructions
- Preheat the oven to 450 degrees. Place the tater tots into a cast iron skillet (or oven safe pan). Bake for 7-8 minutes then turn the tater tots over and bake for an additional 7-8 minutes.
- While the tater tots are baking, prepare the bacon. Start with a cold frying pan, turn the stove to a medium heat and fry the bacon until crispy (not burnt). Remove the bacon from the skillet and put it on a paper towel lined plate. The paper towel will help absorb the excess oil.
- Chop the bacon and scallion (separately) and set them aside. Then, wash, dry and dice the tomatoes, onion, pepper.
- Once the tater tots have finished baking, top them with shredded cheese and place them back into the oven for 2 minutes. Remove the skillet from the oven and top the tater tots with sour cream and all of the other toppings.
- Sit back, relax and enjoy the game.
