Italian Sausage Tortellini

Ingredients
- 1lb of ground Italian sausage (mild or hot)
- 4oz of tomato sauce (no salt added)
- 1, 14.5oz can of fire-roasted tomatoes
- 16oz of cheese tortellini (fresh, not frozen)
- 5 quarts of water (for boiling)
- 1 Tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of ground black pepper
- 1 Tablespoon of ground garlic
- Grated parmesan cheese (optional)
- Fresh basil (optional)
Instructions
- In a large skillet, brown the ground sausage. While the sausage is browning, in a large pot, bring 5 quarts of water along with the olive oil and salt to a boil.
- Once the water is boiling, add in the tortellini and allow the tortellini to cook for about 7 minutes. Then, drain the tortellini and set it aside.
- After the sausage has browned, stir in the tomato sauce and diced tomatoes, and allow to simmer for 3-4 minutes. Then, stir in the ground pepper and garlic powder.
- Add the tortellini into the skillet with the sausage and toss until evenly coated. Serve the tortellini and top with grated Parmesan and strips of fresh basil. Enjoy!
