So what do you do when you are in the mood for lasagna but your have neither the time nor the energy that it requires? You make my Instant Pot Lasagna Soup, of course, and satisfy that craving in a fraction of the time. Enough talking about it. Let’s get cooking.

Ingredients
- 1 teaspoon of extra virgin olive oil
- 1lb of ground beef
- 1 small, white onion
- 5 cloves of garlic
- 1 Tablespoon of dried basil
- 1 Tablespoon of dried oregano
- 1 teaspoon of marjoram
- 1 teaspoon of fennel seed
- 2, 14.5 cans of diced tomatoes (Italian-style preferred)
- 3 tablespoons of tomato paste
- 32 ounces of beef broth
- 8 pieces of dry lasagna
- 8 ounces of ricotta
- 4 ounces of Parmesan reggiano (plus extra for topping)
- 4 ounces of mozzarella
- Fresh parsley (for garnish)
- Salt
- Pepper
Instructions
- Set the InstantPot to sauté and heat the olive oil. Brown the beef in the Instant Pot, then add in the garlic and onion. Stir until the onions are translucent.
- Add in all of the dry seasonings, tomatoes, tomato paste, beef broth and stir.
- Break the lasagna into small pieces and stir those into the pot at well. Then, press “cancel”, set the Instant Pot to pressure, cover the Instant Pot, put it in the lock or "closed" position and set the valve is set to "seal."
- Allow the soup to cook for about twenty minutes. While the soup is cooking, in a small bowl, mix together the ricotta, Parmesan reggiano, and mozzarella and set it aside. Then rough chop the fresh parsley.
- After the twenty minutes have passed, hit “cancel” and press the release valve to allow the Instant Pot to fully de-pressurize.
- Open the Instant Pot, stir the soup and give it a taste. Add salt and pepper as desired. Ladle the soup into serving bowl, top with a dollop of ricotta, sprinkle with parsley and Parmesan, if desired, and enjoy.
