Gumbo is one of those feel good recipes. No matter what time of year it is, gumbo is one of those meals that just makes you feel good inside. It also happens to be one of my husband’s favorite meals. Let’s get cooking!

Ingredients
- 3 strips of bacon (reserve the oil)
- 1 teaspoon of butter
- 1/2 cup of all purpose flour
- 1/2 cup of white onion (diced)
- 1/2 cup of yellow bell peppers (diced)
- 3 cups of chicken or vegetable broth
- 13.5 oz of andouille sausage (sliced)
- 1 teaspoon of garlic (minced)
- 1 can of fire roasted tomatoes
- 2 tablespoons of Cajun seasoning
- 1 cup of frozen okra
- 1lb of shrimp (peeled and deveined)
- 1/2 teaspoon of browning
- 2 stalks of celery (diced)
- 1 tablespoon of smoked paprika
- scallion (optional, for garnish)
Instructions
- In a large pot, cook the bacon and then set the bacon aside. Be sure to reserve the oil from the bacon in the pot.
- Turn the pot down to a medium heat and melt the butter in the pot with the reserved bacon oil.
- Slowly whisk the flour into the pot. Continue to whisk it constantly until you have a nice, brown, creamy roux.
- Stir the onion and bell pepper into the roux.
- Stir in the chicken broth, sausage, and garlic.
- Add the fire roasted tomatoes, celery, okra, paprika and Cajun seasoning to the pot and stir.
- Cover the pot for approximately 15 minutes to allow the flavors to soak into the gumbo.
- After 15 minutes have passed, add the shrimp to the pot and stir. Allow the gumbo to cook for another five minutes or until the shrimp is fully cooked.
- After five minutes have passed, add the browning to gumbo, crumble the bacon into the gumbo, and stir.
- Serve over white rice, add some scallion for garnish, and enjoy.
