I know what you are thinking. Lamb in 30 minutes? Yeah right! But I assure you, it can be done and the result is oh so delicious. Just a few quick steps and you will be at the dinner table in no time.

Ingredients
- 1 rack of lamb
- 1/4 cup of chopped dill
- 2 cloves of garlic, chopped
- 1 teaspoon of sea salt
- 1 tablespoon of paprika
- 2 tablespoons of extra virgin olive oil
Instructions
- Chop the garlic and dill.
- Slice the lamb rack between the ribs.
- In a medium sized bowl, toss the lamb in the olive oil, paprika, garlic, and dill.
- Heat a non-stick grilling pan to a medium-high heat. Spray the pan liberally with cooking spray.
- Grill each piece of lamb for 2-3 minutes per side.
- Plate and serve with your preferred side. I decided to serve the lamb with my favorite couscous recipe. If there's enough interest, I'll post that recipe too.

I tried this recipe but used a different meat (chicken) and instead of grilling it, I placed it in the oven. It added great flavor but I think I left it in oven longer than I should have. This recipe is awesome and great for a week day meal. 2 THUMBS UP!!!
