Fried dumplings are a popular side dish in the Caribbean. Many islands have some variation of fried dumplings, even if it is called by a different name. In Barbados, which is where my family is from, we call them bakes. Since it is Fall here in Atlanta, I decided to a bit of a mash up between a Caribbean favorite (fried dumpling) and an American Fall favorite (pumpkin). Introducing…fried pumpkin dumplings. Doesn’t it just roll off your tongue? It just sounds delicious, doesn’t it? Let’s get cooking.

Ingredients
- 1/2 small pumpkin
- 2 cups of all purpose flour
- 1 tablespoon of baking powder
- 1 teaspoon of salt
- 4 tablespoons of sugar
- 2 tablespoons of butter (room temperature)
- 3 1/2 cups of water
- canola or vegetable oil (for frying)
- flour (for rolling)
Instructions
- Using a knife or vegetable peeler, remove the skin from the pumpkin. Remove all of the seeds from inside of the pumpkin and cut the pumpkin into small chunks.
- In a small saucepan, bring three cups of water to a boil and add the pumpkin into the saucepan. Allow the pumpkin to cook for about ten minutes.
- While the pumpkin is cooking, in a large bowl, combine the flour, salt, sugar, and baking powder. Mix all four ingredients together thoroughly.
- Work the butter into the flour mixture using your hands.
- Remove the saucepan with the pumpkin from the stove, drain the pumpkin, and mash the pumpkin using a fork.
- Allow the pumpkin to cool for a few minutes and then add the pumpkin into the bowl with the flour mixture.
- Mix the pumpkin into the flour and then slowly add 1/2 cup of water, continuously stirring as you add the water.
- Once you have mixed all the ingredients together, cover the batter over with a towel for about 20 minutes and set it aside.
- Generously flour your counter top or rolling board. You will need this area to roll the dough into golf-sized balls.
- Using a tablespoon, scoop out chunks of the batter and place them onto your floured board or counter top. Roll each scoop of dough into a small ball and set it aside. Repeat this process until you have used all of the dough.
- In a large nonstick frying pan, bring 1/2 cup of oil to a medium heat.
- Place the dumplings into the frying pan. Be sure to leave enough space between each dumpling.
- Fry each dumpling until it is golden brown on each side. If the oil in your frying pan is starting to get low, go ahead and pour in the remaining 1/2 cup of oil.
- Line a plate with paper towel and place the finished dumplings onto the plate. The paper towel will absorb any excess oil.
- Serve and enjoy.
