Ingredients
- 1 1/2 cups of water
- 1/2 tablespoon butter
- 1 teaspoon of iodized salt (Morton's or similar)
- 1 cup of Jasmine rice
- 1 small white onion
- 1 tablespoon of vegetable oil
- 1lb ground turkey
- 1 packet of taco seasoning
- 1 bunch of cilantro
- 1 head of romaine lettuce
- 2 plum tomatoes
- 1 Haas avocado
- 1, 15oz can of black beans
- 1 teaspoon of Goya Adobo
- 1, 15oz can of sweet corn
- 1 small block of queso blanco (optional)
Instructions
- In a medium-sized saucepan, bring the water to a boil. Add in the salt, butter, and rice. Reduce the heat to a low simmer, stir, and allow the rice to cook (uncovered) for about 15 minutes.
- Peel and dice the onion, separating the diced onion into two piles, reserving one pile as topping for later. In a large skillet, bring one teaspoon of oil to a medium heat. Add in the onions and saute until translucent. Then, add the ground turkey to the skillet. Use a wooden spoon to break up the ground turkey and allow the meat to brown (this should take 4-5 minutes) before adding in the taco seasoning. Stir the taco seasoning into the turkey and reduce the heat to a low simmer.
- Remove the cilantro leaves from the stems and rough chop the cilantro. Add 1 cup of chopped cilantro to the rice, stir, then cover the saucepan and allow the rice to cook for 10 more minutes. While the rice is cooking, prepare the beans and corn. Grab two small saucepans or skillets, pour the black beans into one and the corn into the other and bring to a medium-heat, stirring occasionally. Add the Adobo seasoning to the black beans. Allow the black beans and corn to cook for about five minutes and then remove from heat.
- While the rice is in its final stages of cooking, chop the lettuce, dice the tomatoes, cube the avocado, and grater the cheese. Turn off the rice and begin to build your burrito bowl. I like to build my burrito bowl in the following order, starting from the bottom layer--rice, black beans, ground turkey, lettuce, tomato, onion, corn, avocado, cilantro, cheese. However, the great thing about burrito bowls is that you can do what you want. Put as many or as few toppings as your would like. Do whatever works for you and enjoy.
