Coucou and Flying Fish

Coucou and flying fish were dinner staples when I was a child. After all, it is the national dish of Barbados and I am first generation Bajan-American. Flying fish is fairly hard to come by, even in Barbados, nowadays. I can’t believe how expensive it has gotten, rivaled only by oxtails in terms of the price increase over the years. But alas, I love my flying fish, so I pay the price and buy it anyway because for me, flying fish is a piece of home.

I fully recognize that it is highly unlikely that you will be able to secure flying fish in the U.S., so feel free to substitute flying fish for another flaky white fish that is readily available. Now I know what you are thinking. Well, how did you get some? I have my ways, my foodie friends. Let’s get cooking.
