Every now and then, I convince myself that I need to make something other than pancakes and waffles for Saturday breakfast. But in those moments when I really don’t feel like it, and I still want pancakes or waffles, and the hubs is completely over it, we compromise and I make crepes. It’s quick, it’s fun, and who doesn’t love a crepes bar with all the toppings you could want. Berries, nutella, bananas, chocolate chips, whipped cream, powdered sugar…can you see just how easy it is to really go wild here? Let’s get cooking!
Cinnamon Cardamom Crepes with Fresh Strawberries

Ingredients
- 1 1/4 cup of milk
- 1 1/2 cup of complete pancake mix
- 3 large eggs
- 2 teaspoons of cinnamon cardamom butter
- 1/2 pint of strawberries
- cooking spray
- powdered sugar (optional)
Instructions
- In a large bowl, whisk together the pancake mix and milk. Then add in the eggs and butter and set the mixture aside.
- Carefully wash, pat dry, and thinly slice the strawberries. Set the strawberries aside.
- Spray a small skillet with cooking spray and bring the skillet to a low-medium heat. Pour in enough batter to fully coat the bottom of the skillet.
- Allow each side of the crepe to cook for about two minutes or until golden. Repeat steps 3 and 4 until you have use all of the batter.
- Roll or fold the crepes however you would like, top them with strawberries, sprinkle them with powdered sugar, and enjoy.
- For best results, add a some strawberry syrup and nice hot cup of cafe con leche.
