Ingredients
- 10 ounces of ground chorizo
- 1 small white onion
- 1 bunch of cilantro
- 1/2 cup of sour cream
- 1/2 lime
- 5 flour tortillas
Instructions
- Bring a small skillet to a medium heat. Empty the chorizo into the skillet and break the chorizo apart using a fork or wooden spoon. Allow the chorizo to cook for about 4-5 minutes, stirring frequently, until bubbling and completely separated. Remove from heat and set aside.
- Peel and dice the onion and rough chop the equivalent of about 1/3 cup of cilantro. Set the onion and cilantro aside.
- In a small bowl, mix the sour cream and the juice of 1/2 lime and set aside.
- In another skillet or on an indoor grill, heat or grill the flour tortillas for about 30 second to 1 minute per side. Repeat this process until all of the tortillas have been heated or grilled.
- Now it is time to assemble the tacos. Place about 2 ounces of chorizo on each tortilla, top each with onion, cilantro, and sour cream-lime sauce, and enjoy.
