Ingredients
- 2 over-ripened bananas
- 1/2 cup of white granulated sugar
- 1/2 raw brown sugar
- 1 tablespoon of vanilla extract
- 2 large eggs
- 1 stick of butter, melted
- 2 cups of Gold Medal all-purpose flour
- 1 teaspoon of Arm & Hammer baking soda
- 1/2 cup of pecans (or walnuts) chopped
- cooking spray
Instructions
- Preheat the oven to 350 degrees.
- In a small bowl, mash the bananas with a fork until smooth. It should be the consistency of a puree.
- Stir the eggs and vanilla extract into the mashed bananas.
- In a mixing bowl, mix together (a.k.a. cream) the butter and sugar.
- In another mixing bowl, combine the flour and baking soda. Add in the bananas and creamed butter and sugar. Stir until all of the ingredients are evenly distributed.
- Add in the chopped pecans and stir the mixture so that the pecans are evenly distributed.
- Lightly spray a non-stick loaf pan (approximately 9 in. x 5 in.) and fill it with the bread batter.
- Bake for 1 hour, remove from the oven, allow to cool, then cut and serve.
