Isn’t it funny how some things that seemed so icky as a child become some of the foods you look forward to most as an adult? When I was growing up, my late grandmother loved bran muffins. I, however, always wanted the blueberry muffins. I would smile whenever she put the blueberry muffins in our shopping cart and pout when she went with her usual bran muffins. But nowadays, I love a good bran muffin. I’m sure my grandma would laugh at me about this if she were still here and more importantly, she would love this recipe. Every time I make this recipe, I think of her and the many, many years of laughter we shared. Grandma, this one’s for you. My foodie friends, let’s get baking.

Ingredients
- 1 1/4 cups of all purpose flour
- 1 cup of wheat bran
- 2 teaspoons baking powder
- 1/2 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- pinch of salt
- 2 large eggs (room temperature)
- 1/3 cup of brown sugar
- 1/3 cup of molasses
- 2 bananas
- 1 cup of whole milk
- 5 Tablespoons of butter
- 1 teaspoon of vanilla extract
- walnuts (optional, for topping)
Instructions
- Preheat the oven to 375 degrees. Then, in a large bowl, combine the flour, bran, baking powder, baking soda, cinnamon, nutmeg, and salt and whisk the ingredients together.
- Peel and slice the banana. In a separate bowl, mash the banana using a fork, then add in the eggs, brown sugar, molasses, milk, butter, and vanilla extract and beat until all ingredients are fully incorporated.
- Fold the wet ingredients mixture into the dry ingredients until all ingredients are fully incorporated.
- Place cupcake liners into your muffin tin and scoop 2 1/2 Tablespoons of batter into each liner. Repeat this step until all of the batter has been used. Top each muffin with crushed walnuts (if desired) and bake for 20-22 minutes.
- Remove from oven, allow to cool and enjoy. Pro-tip: You can store leftover muffins in the freezer in a freezer safe bag for up to two months.
