Ingredients
- 10-12 slices of bacon
- 1 16oz box of elbow macaroni
- 4-6 quarts of water
- 1 teaspoon of salt
- 3 tablespoons of butter
- 2 tablespoons of all purpose flour
- 3/4 cup of heavy cream
- 3/4 cup of whole milk
- 2 cups of mozzarella (shredded)
- 2 cups of white cheddar (shredded)
- 2 cups of sharp yellow cheddar (shredded)
- 1/2 teaspoon of black pepper
- 2 teaspoons of paprika
- 1 teaspoon of garlic powder
Instructions
- Bring a large skillet to a medium heat and fry the bacon so that it is slightly less than crispy. Remove the bacon from the skillet and place the bacon strips on a paper towel lined plate. The paper towel will help absorb the excess oil. On a cutting board, rough chop the bacon and set it aside.
- Bring 4-6 quarts of water to a boil in a large pot. Add 1 tablespoon of butter and a 1/2 teaspoon of salt to the water. Add the macaroni elbows into the boiling water and cook for 6-7 minutes. While the pasta is cooking, preheat the oven to 350 degrees.
- Strain the pasta and set it aside. In medium-sized saucepan, melt 2 tablespoons of butter over a medium heat. Add the flour into the saucepan with the melted butter. Stir constantly with a wooden spoon until it is the consistency of a paste.
- Slowly stir in the the heavy cream and milk. Then begin to stir in the cheese one cup at a time. Reserve one cup of sharp yellow cheddar cheese; you will use this to top the macaroni before placing it into the oven.
- Continuously stir the cheese sauce until all of the cheese is melted. Pour the macaroni elbows into the cheese sauce and stir until everything is evenly mixed.
- Add in the paprika, black pepper and garlic powder. Give the macaroni another few stirs and add in the bacon. Continue to stir until the bacon is thoroughly mixed into the macaroni.
- Transfer the macaroni to a baking pan or dutch oven and top with the remaining cheddar cheese. Bake at 350 degrees for 20-25 minutes.
- Plate, serve and enjoy the cheesy, bacon filled goodness.
