Ahhhh, quinoa. What can I say? Some people love it, some people can’t stand the stuff. Me? I’m in the love it camp and this is one of my favorite ways to prepare it. Let’s get cooking.

Ingredients
- 2 cups of chicken or vegetable broth
- 1/2 cup of red onion, diced
- 1/2 pint of grape tomatoes, halved
- 1 large, Haas avocado
- 1 cup of kale
- 1 cup of quinoa
Instructions
- In a medium-sized saucepan, bring the broth to a boil. While the broth is heating, dice the onions, half the tomatoes, and then slice, peel, and cut the avocado into chunks. Set the ingredients aside.
- Slice the kale into shreds and set it aside as well. (Pro tip: If you are low on time, you can purchase pre-shredded kale.)
- Once the broth is boiling, add in the onion and quinoa, stir, reduce the heat to a simmer, and cover the saucepan. Allow the quinoa to cook for 20-25 minutes.
- Fluff the quinoa using a fork, then add in the tomatoes, avocado and kale. Then, plate, serve and enjoy.
